I love Italy – not only is it not too far away but it has several active volcanoes (one of my favourite types of terrain!), fantastic food, great weather and a huge variety of places and experiences to enjoy. I’ve watched opera in a Roman amphitheatre in Verona, climbed the slippery marble steps to the top of the leaning tower of Pisa, sat watching Stromboli shooting hot rocks up in the air and peered into the smoking depths of Mount Etna’s main crater. It’s the country I’ve visited the most times – and I’m sure I will go back for more at some point!
My favourite country for food however, is India. As a vegetarian, there are few countries I can go to where I can be confident that there will be a plentiful supply of tasty and interesting vegetarian food. India is one of the few exceptions. As a curry lover, it was fantastic to go to dinner each evening knowing that there would be several options to choose from – all of them delicious. I never had a problem with any of the food being too spicy and there was no hint of tummy upset.
Where do I want to go next? Having been lucky enough to go to Antarctica, I would love to return to this part of the world and see more. I have my eye on South Georgia with its immense colonies of King penguins. Who couldn’t love being with penguins?!
